Salsa Recipe

Mondays are busy days here on the farm. Here the girls are helping bake bread. We baked 8 loaves of bread to last us the week.

Alyssa made her famous Ranch Goat Cheese. It is so good on salad. It’s a healthy replacement for dressing as well.

We made Salsa using fresh ingredients from our farm. I really don’t like to go to the store for anything. We’ve adapted our recipe from Cousin Jim’s and Dorcas Bender’s recipes. They both make great salsa!

12 large tomatoes, quartered

10 cloves of garlic

2 small jalapenos

a bunch of cilantro

2 tsp. salt

one small yellow onion

one small red onion

I add 9 of the tomatoes to the blender one quarter at a time, I add the rest of the ingredients except 3 tomatoes, and the onions to the blender and blend.

I use the food processer to chop the rest of the tomatoes and the onions.

I add it all together, taste test, add any additional ingredients needed.

Makes about 8 cups salsa.

We also canned pizza sauce today. So for dinner, we had pasta with the additional sauce.

CSA Week 9 – June 30, 2012

This week our CSA customers received a cantaloupe, okra, potatoes, green beans, Roma tomatoes, cherry pear tomato mix, yellow squash and zucchini, cucumbers, big boy tomatoes, and a bunch of carrots. Enjoy!

Our men work so hard both on farm and off! It warms my heart when D, our 16 year old son, comes in after a long day and the first thing he does is scoop up his baby sister.

CSA Week 8 – June 23, 2012

This week our CSA customers received a head of cabbage, a bag of greens (kale, Swiss Chard, and new Zealand spinach), green beans, a cherry pear tomato mix, big boy tomatoes, a bunch of carrots, cucumbers, peppers (sweet and banana ), and a squash mix (yellow, zucchini, and Pattypan) Enjoy!

The children love being the quality control team. Here they’re taste testing carrots! A perk of being a farmer, our kids love veggies. 🙂

This week our CSA customers received a bag of mixed greens (Swiss Chard, Kale, and New Zealand Spinach ), cabbage, potatoes, green beans, sweet bell peppers, a pound of cherry pear mix potatoes, a pound of big boy tomatoes, a cucumber mix (Armenian, Boston, and Poinsetts ), red onions, a squash mix (yellow, zucchini, and pattypan), and a bunch of carrots. CSA Week 6 – June 9, 2012

This week our CSA customers will receive a bag of mixed greens (kale, Swiss Chard, and new Zealand spinach), cabbage (green and purple), green beans, Yukon gold potatoes, onions (yellow and red), pepper mix ( sweet bell peppers, jalapeno and sweet banana), big boy tomatoes and cherry / pear mix, cucumbers, squash mix (pattypan, zucchini, and yellow squash) and a bunch of carrots.
Note:This week our CSA had a $25.00 value and our goal is $20.00 so out customers got to choose to pay $25.00 or to modify their order. We pray everyone is as blessed by their order as we are preparing it for you!

CSA Week 5 – June 2, 2012

This week our CSA customers received green and red cabbages, green beans, red and yellow onions, bell peppers, cucumbers, turnips, carrots, cherry/pear tomato mix, and squash/zucchini mix.
Depending on your pickup day, your order may be a little different. We pick the garden and then split the produce the best we can. Also, there were no potatoes this order because of rain. The garden was too muddy to dig, but thank God for rain! Blessings to all!

CSA Week 4 – May 26, 2012

Our CSA Customers received cabbage, yellow squash, zucchini, Yukon gold potatoes, green beans, yellow and red onions, cucumbers, turnips, carrots, and radishes. We hope everyone is enjoying their farm fresh, chemical free produce. We have been busy preserving our harvest!

We canned 49 quarts of green beans and have plenty more in the garden. We are offering a bulk price of $2.00 a pound with a minimum purchase of 10 pounds. It takes approximately 3/4 lb of green beans per quart. So 10 pounds of green beans would make about 13 quarts. Green beans are so easy to can and great fun to do as a family. Happy canning!

We have all of these items for sale on the farm through the week. You can call ahead and we can have them ready for you or we can pick while you wait.
