CSA Week 16 – August 18, 2012 and Supper Ideas

As we prepared our CSA’s today, I realized I forgot to take a picture of Saturday’s CSA. This is also a good time to remind everyone that every CSA is not the same. We pick until we reach right over the $20.00 mark. Tuesday’s CSA might be a little different than Saturday’s depending on what the garden’s producing. This week, everyone received okra, tomatoes, cucumbers and peppers. We also added some Certified Organic Fruit; nectarines, grapes, and oranges.

Emmy, Timmy, and Abby decided the tree fort was a better place for their snack since our new puppy, Samson, loves fruit.


A snack tray of sliced cucumbers, tomatoes and peppers, and whole tomatoes and peppers. I put this out while I’m making Supper.

Serve these cukes all week long as a before dinner snack or instead of chips as a side.

Here’s a few dinner ideas for those busy seasons of life. For us, we are trying to get the garden caught up before we start school in September. I love school. Anyway, so we are eating easy this week. Since we eat what we grow I thought I’d share a few of our meals for the week. Feel free to leave a comment and share your ideas.

First, cut up some of your veggies in a tray or on a plate, like the above picture.

1) Chicken wraps –  I put some chicken breast in the crockpot (no seasonings) on low all day. You can even put them in frozen if you forgot to thaw them out. Then set out whole wheat tortillas, sliced chicken, shredded cheese, and your veggie tray. We also like kale or romaine and Alyssa’s ranch. Our children love the cucumbers (like chips) dipped in ranch. Remember, raw food is so good for you!

2) Chicken or Steak Fajitas – Again, put the meat in the crockpot and season for fajitas. In a second crockpot, put double the amount of pinto beans to feed your family and season. (If you need recipes, feel free to leave a comment and I’ll post them.) Then right before dinner saute peppers and onions. Yum!

3)When the crockpot full of beans cools, put it in the fridge. The next day pull it out and make sure there’s enough water to cover the beans. Heat on low all day and mash with a potato masher for bean burritos. Add cheese, salsa, sour cream, and tomatoes. You can add corn for a great side.

4) If you have any veggies left over, you can make a stirfry. Cook some brown rice – remember it takes 45 minutes not 15 like white. Saute some chicken or steak strips in a little olive oil. Add Braggs Liquid Aminos (found at health food stores – Our Guthrie Health Food Store is amazing!) to keep it from sticking and add flavor. Add veggies, carrots, kale, peppers, onions, okra whatever. 🙂 Cut veggies diagonally for a new look.

Samson (our new pup) is making life an adventure. He likes to drag things all over the property. He pulled a plastic bag of bolts out of the shed and left it by the garden. So funny! If you leave it on the porch, it’s his. He perfers flip-flops over boots. Many of us have lost our summer shoes and I lost my best pair of garden gloves. I suppose I’ll learn to put my things up. 🙂

Life is an adventure! Enjoy it because life is short and death is certain. Love your husbands (wifes), children, and the LORD most of all! God is good, so very good!

Remember as you begin homeschool this year – Seek ye first the kingdom of God and all these things will be added unto you.
